Do you ever feel like you can't get your toddler (or yourself in my case) to eat veggies? Try sneaking pureed vegetables into your favorite mac and cheese recipe or microwave meal. I have found that I can sneak steamed butternut squash, regular squash, cauliflower or carrots into any mac and cheese dish. I also use the elbow macaroni that is whole wheat and my toddler eats it up. It is a regular in my house. Below is a sample recipe for my mac and cheese:
1 box of cooked elbow macaroni (whole wheat or multi-grain)
2 - 3 cups of cheddar cheese (I mix sharp and mild)
1 cup of milk (use more or less according to how creamy you want it)
3 T of flour
1 T butter
1/2 cup of your favorit pureed veggie (butternut squash is my favorite)...if you don't have time to puree use store bought baby food.
salt and pepper to taste
Melt butter in medium saucepan
Add flour and stir lightly
Add milk and cheddar cheese (you can cut up block cheese or have it grated)
Stir until completely melted
Add the cooked elbow macaroni
I freeze half of this and have it on hand for later.
